Dr. Odoms-Young’s research explores how social and structural factors shape dietary behaviors and contribute to disparities in diet-related chronic diseases. Using a life course approach, she examines how intersecting systems of oppression—including racism, economic inequality, and environmental injustice—impact food access, food security, dietary patterns, and health outcomes, particularly in historically marginalized communities and systems and improve nutritional well-being.
