Community-engaged learning is an integral part of each of the courses Kelly Quinn teaches and in her role as community nutrition coordinator for Cornell’s Dietetic Internship. Her goal as an Engaged Faculty Fellow is to expand community-engaged learning opportunities within her courses. These opportunities will become deliverables that will have long-term benefits for community partners, their participants and the students themselves.
In each of her courses, Quinn educates students on how to provide evidence-based, engaging nutrition education in a variety of formats. Nutritional science students have a wealth of nutritional knowledge that needs to become “digestible” for their community partner’s target audiences. Deliverables become more than assignments when students see the impact they can have on the participants of the community partners. Students also gain proficiency at incorporating feedback to meet their partner’s needs, which prepares them for the workforce.
