Interdisciplinary research for community food security, health and resilience in Enfield, New York
Since 2020, Enfield Food Distribution Center (ECFC) has experienced a dramatic increase in demand for its services, and its existing premises have become inadequate. As a result, EFDC wants to expand its operations to a new facility and community gardens that can serve as a central hub for the food pantry, community meals and nutrition education.
Undergraduates in engineering and architecture courses and professional students from an MPA capstone course will engage in a research collaboration with EFDC. Their goal is to address operational challenges and design a new facility, learning from experts and sharing their work through coursework, community-engaged research, dialogue and reflection and a joint symposium.
